O’Fadoli follows the rhythm of the village. Whether it’s market day, a stop during a walk, or just a daily pause for reflection, people come to the bar to cool off or warm up. Depending on the time and season – coffees, teas, fruit juices, lemonades, and iced drinks and ready to refresh you, whether to be enjoyed alongside a conversation or just a quiet moment to yourself.

If you’re feeling peckish, choose a croque-monsieur (toasted sandwich), gazpacho (cold soup), or a poke bowl. Other delicious items on offer are boards of local charcuterie meats or cheeses, raw vegetable platters with dip, panisses (chickpea fritters), and the essential patatas bravas – all perfect for sharing.

For those with a sweet tooth, artisanal ice creams round out our menu that refreshes each season. It’s the perfect excuse to extend your time at the bar, from the first sip to the last bite.

Aperitif Time

The aperitif hour is a cherished ritual in Provence, and at O’Fadoli, this worthy ritual becomes an experience of taste and discovery.

The menu highlights a wide range of cocktails, from timeless classics to house creations: ‘Éphémère’, ‘Lavandin’, White Negroni, Old Fashioned (with Cabane à Sucre’, or ‘Cueillette de Printemps’ (Spring Harvest) – a winner at a regional competition in 2026. The names of these cocktails alone are enough to spark curiosity. Aromatic herbs, citrus fruits, liqueurs, and spirits come together in a delicate drink explosion that evokes the South of France. From the Provençal Spritz and Chameleon Mojito to house-made Sours and Mules, there is something for everyone, whether you prefer a classic cocktail or something more surprising.

Our pastis collection features over 60 labels from historic houses and artisanal distilleries, including Maison Ferroni, Henri Bardouin, and Distillerie Jean Boyer. While the French South naturally takes centre stage, the collection also showcases spirits from other French regions, each with its own unique recipe, character, and aromatic balance. With vegetal, floral, spicy, or woody profiles, these tasting journeys invite you to rediscover this iconic Southern spirit.

The Pleasure of the ‘Digestif’

After dinner, O’Fadoli invites you to extend your meal and linger over a final drink. The collection includes more than twenty absinthes, prepared according to tradition: cool water from a fountain slowly clouds the spirit before tasting.

Our ‘digestif’ cellar holds many other discoveries. From Mirabeau, Juillet, and Maison Ferroni’s ‘Main de Bouddha’ gins to whiskies like Macallan 12 Year Old Double Cask, Ardbeg Uigeadail, and Nikka Coffey Grain, the selection features bottles chosen for their distinctive personalities. Manguin’s pear-infused Single Malt, rums from Ferroni, La Favorite, and Karukera, along with mezcals, eaux-de-vie, and liqueurs, round out a selection designed for both the curious and the connoisseur.

Cigar enthusiasts can extend their favourite pastime with a selection from Honduras, Nicaragua, the Dominican Republic, and Cuba – featuring brands such as Don Tomás, CAO, Balmoral, Diesel, Davidoff, Cohiba, and Partagás. With profiles ranging from woody and roasted to spicy and chocolatey, these cigars are meant to be savoured at a leisurely pace, as the evening unfolds at O’Fadoli.

Thomas, bartender and mixologist

Thomas grew up in Provence in a family of spirits producers, so becoming a bartender came naturally to him. A former flair bartending competitor, the art of juggling bottles, he has worked in prestigious venues, from the Beau-Rivage Palace in Lausanne to the Fairmont Monte Carlo. He has also taken part in numerous private events in Cannes and Monaco and has lent his expertise to the Pernod Ricard group for over fifteen years. Along the way, he has honed his craft and served a discerning clientele, notably during the Cannes Film Festival.

Back in his native region, Thomas continues to explore mixology, working with local produce as the seasons change. Passionate about botany, he grows some of the ingredients he uses and forages for wild plants, drawing out their aromas in his creations. His approach is both precise and instinctive, much like that of a chef, with every ingredient given its rightful place.

Behind the O’Fadoli bar, Thomas now brings this expertise to a distinctive cocktail menu, guided by precise technique and a deep understanding of flavour.
