Domaine Le Clos de Caille à Entrecasteaux
Every year on the third weekend of October, the ‘Vignobles en Scène’ (Spotlight on Wineries) event invites guests to discover the richness and diversity of the French wine regions. In Cotignac, Lou Calen is participating in this major national wine tourism event by hosting a food-and-wine pairing dinner at the Jardin Secre restaurant, as well as two mixology workshops at the O’Fadoli cocktail bar. Wines from Clos de Caille will accompany dishes created by Benoît Witz, while Prosecco and vermouth will take centre stage in Spritz and Negroni cocktails at the bar.

Dinner Featuring Clos de Caille Wines

Friday, 16th October, 2026, from 7:00 PM

Located in Entrecasteaux, in the heart of “Provence Verte” (Green Provence), Clos de Caille benefits from an exceptional terroir and a unique microclimate, shaped by its altitude and a wooded natural setting on gently sloping terrain. Certified organic, the estate employs ‘massal’ selection method and plot-by-plot vinification – which are rare assets in Provence – all within an innovative winery designed by architect Rudy Ricciotti.

As an historic vineyard with roots dating back to the 12th century, Clos de Caille was revitalized in 2021 with the ambition of becoming a benchmark wine producer in Provence. Since 2023, the estate has been under the technical direction of renowned oenologist Matthieu Cosse. Producing wine in all three colours (red, white, and rosé), its wines have already garnered significant acclaim from international critics. The Anomis Rosé 2025 notably received a score of 92/100 from Robert Parker, while the Clos de Caille Rouge 2024 was also awarded a 92/100 at the Sommeliers Choice Awards.

Driven by the passion of the Mariotti family – established in Monaco since the 1950s – Clos de Caille has made its mark on iconic establishments across the French Riviera and enjoys an international reputation, notably as a global partner for Alain Ducasse’s restaurants.

For this special evening event at the Jardin Secret restaurant, Benoît Witz has created four dishes centred on autumn produce. The menu will feature porcini mushrooms, figs, and foie gras wrapped in vine leaves; line-caught sea bream; beef Wellington; and pears poached in the estate’s own wine. Guillaume Galliano will present the three selected wine pairings at the table: Lucis Blanc 2023, Clos de Caille Blanc 2025, and Patrius Rouge 2024.

Mixology workshops: wine meets the art of the cocktail

Friday, 16th October and Saturday, 17th October, from 5:00 PM to 6:30 PM

Thomas, a mixologist at O’Fadoli, grew up in Provence in a family of spirits producers. A former ‘flair bartending’ competitor with experience at the Beau-Rivage Palace and the Fairmont Monte Carlo, he approaches cocktail-making with the precision of a chef. Passionate about botany, he cultivates some of his own ingredients and gathers wild plants, using their aromas to inspire his creations.

This focus on technique and flavour will guide the two workshops offered as part of ‘Vignobles en Scène’ (Spotlight on Wineries), which explore the role of wine in cocktails. Prosecco allows us to trace the evolution of the Spritz, while the choice of vermouth shapes the character of the Negroni. Prepare to enjoy both recipes to appreciate the role wine plays in balancing these two cocktails!
